you live on, or within driving distance of, the NSW Southern Highlands, you have
a unique opportunity to purchase our finest quality Aberdeen Angus beef.
Highland Heritage Beef is raised on the lush green pastures of our farm in the Belmore Falls Valley to the south of the village of Robertson. We keep our breeding herd to a maximum of 30 cows to ensure that they are maintained in peak condition. We have permanent creek water, a large dam, extensive irrigation systems and efficient farming practices, so we are able to maintain our pastures, and therefore our herd, in prime condition, even in drought conditions. Property images. Our meat derives from steers which are guaranteed 100% grass-fed and hormone-free to provide you with the tastiest and healthiest meat possible. Increasingly, research indicates that there are many health benefits to be enjoyed from eating grass-fed beef compared with standard grain-fed, or grain-finished meat.
Links to further health information may be found here. Our Highland Heritage Beef also gives you the satisfaction of knowing that each animal in our herd is treated with the utmost care and respect. We adopt a low-scale, hands-on approach to farming. Animals are moved to fresh pasture every day so that both pasture and animals may be monitored daily . One side of Highland Heritage Beef is guaranteed to yield at least 70 kilos of meat, excluding bones, providing approximately 25% premium cuts (fillet, scotch fillet, rump, T-bone and sirloin), 35% quality cuts (round, topside, blade, silverside and skirt) and 40% economy cuts ( chuck, gravy beef, brisket, sausages, mince and osso bucco). When you order you will be given a Preparation Instructions Sheet to complete, advising the butcher how you want your meat prepared. You may choose how many serves you want in each pack and whether you want certain cuts whole or sliced. You may request all, some or none of the bones. A diagram of the various beef cuts may be viewed here. The price of $690.00 for the side compares very favourably with the price of equivalent cuts from a quality butcher. A chest freezer will easily hold your meat, supplying your needs for 6 to 9 months, depending on your rate of use. Freezing in no way diminishes the quality of the meat which is guaranteed tender and full of flavour. We are certain you will agree with our many regular clients who consider Highland Heritage Beef the finest meat they have ever eaten. Delivery is 3 weeks from the time we confirm your order. Highland Heritage Beef is hung for seven days, generally agreed to be the optimum hanging time for tenderness and is then prepared by the Moss Vale Butchery. All excess fat is trimmed away, ensuring that your meat is 'kitchen ready' and each serving is wrapped in a plastic bag and clearly labelled by cut. The meat is then packed into polystyrene boxes with lids. You will be contacted a week before your meat is due for collection from Moss Vale Butchery which is 1 1/2 hours drive from Sydney or Canberra. There is good parking at both the front and rear of the butcher shop to enable you easy loading of your meat. We include additional packets of freezer bags and directions on how best to freeze your meat and thaw it again.
